Today, finally my post on – Les Goulats.

What really attracted me to this bottle was the grape variety blend – Arbane, Petit Meslier and Pinot Gris (78% combined) plus 22% Chardonnay. These three "forgotten" varieties are part of Champagne's original DNA, but are hardly found today. All the more exciting when a winemaker consciously puts them front and center.

In the glass, Les Goulats shows exactly the character you'd expect: yellow stone fruit, mirabelle plum, a hint of nuts and some wood. Very dry, almost purist, with a fine, lively acidity. Despite its clarity, it feels calm and balanced – not a loud wine, but one that reveals more depth with every minute.
