A rich family brunch with the perfect champagne to match – weekends hardly get off to a better start.

On the table sits an exciting interpretation of Eggs Benedict in Carbonara style: sesame bagel with fresh spinach leaves, rendered guanciale, a poached egg and creamy hollandaise on top.

Paired with the Authentique 2012 from Tribaut-Schloesser – a champagne that fits perfectly with this kind of setting.

The bottle came with hemp twine instead of wire muselet and the question of how I was supposed to get this thing open elegantly :D

Twisting the cork, as someone once told me – no chance.

In the end I just leveraged the twine over the cork with my bottle opener tool – unspectacular, but dignified.

Any thoughts on that move?

In the glass then that quiet strength, depth and balance that I had expected from such a well-matured Blanc de Noirs – and that's exactly what I had been looking forward to with this bottle.

Here the champagne also shows why 2012 was a Pinot Noir vintage and why the dosage here is perfectly chosen.

The acidity cuts cleanly through the fat and sauce, and the wood brings structure into play without dominating. Brioche and butter notes pick up on the hollandaise, while the freshness holds everything together.

The result wasn't a contrast pairing, but a perfect complement.
