With the Blanc de Blancs Brut from Aspasie, I have a really exciting exotic find here.

This Blanc de Blancs consists of 100% Chardonnay from a single cru, harvested from old vines (Vieilles Vignes). What always impresses me about Aspasie is their patience: the wine gets a full 60 months (that's 5 years!) of time on the lees before it's disgorged. Additionally, they work with minimal sulfur addition during bottling.

The family-run winery of Vincent and his team (now in their 5th generation) is located in Brouillet, high up in the Vallée de l'Ardre. This cool region is actually the absolute stronghold for Pinot Meunier. But Aspasie impressively proves here that fantastic Chardonnay can also grow on these soils!

In the glass, this Blanc de Blancs shows extremely fresh and purist. On the nose you immediately get an almost maritime breeze: notes of iodine-rich limestone, delicate acacia blossoms and fresh lemon. On the palate it develops a precise, vibrant acidity that's rounded off by a wonderfully salty, mineral finish.
