The Cuvée

Champagne La bulle Libre is the main brand of the family Domaine Hénin in Aÿ, with its own plots in Aÿ, Chouilly, and Mareuil-le-Port, organic and Demeter certified. Since the takeover of the estate in 2022, first by Romain, and now run by Romain and Thomas Hénin together, this name stands for what the family actually produces. No purchased grapes, no négoce: exclusively fruit from their own parcels.

The approach is that of a natural winemaker in the best sense: close to nature, handcrafted, with as little intervention as possible. The Champagnes arrive in the glass without Dosage, without added sulfur, unfiltered and unfined, uncompromisingly purist and precise. This is no easy path, but a bet on healthy fruit and a steady hand, since nothing smooths the wine out afterward.

Meunier tu dors, base 2022, is a tribute to the Marne's often underrated grape variety. A Brut Nature made from one hundred percent Meunier, combining the variety's juicy, fleshy fruit with a raw, energetic structure. Rough edges included, and exactly as intended: a wine with character rather than polish.

My Tastings

Today I'm serving up the full range of flavors once again: homemade hummus, fiery zhug, spicy shakshuka, grilled eggplant, and fresh tomato salsa. The fact that the plate looks more like "creative chaos" than fine dining today doesn't take away from the enjoyment one bit!

Paired with a wine that doesn't just hold its own against this concentrated, spicy-hot array of flavors, but actually complements it: the "Meunier tu dors."

100% Meunier, without Dosage (Brut Nature), without added sulfur, and made with minimal intervention, it shows incredible energy. The typical, juicy-fleshy Meunier fruit harmonizes brilliantly with the smoky eggplant and the spice in the shakshuka. At the same time, it brings a purist structure that captures the fiery zhug perfectly and cuts through the creaminess of the hummus. An absolute pairing highlight!

A special shoutout also goes to the fantastic label, created by Nicolas Sautel. It captures the wild, unconventional soul of this wine perfectly!

A little nerd fact on the side: the year that catches your eye on the label is the Dégorgement date, not the vintage. The base of the wine is 2022. And when it comes to the Dégorgement, there's a second curiosity: the label states 08.12.2025, but the wine was actually disgorged back in September 2025, a known labeling error. Don't we just love that kind of thing?
