The Cuvée Euphrasie is not a vintage but a deliberate union of two harvests: 85% Chardonnay from 2012 and 15% Pinot Noir from 2011. The grapes come from Louvois and the Premier Cru village of Tauxières-Mutry. A champagne that works best solo – without a big meal, without staging. Simply a quiet moment and the glass.

With Guy de Chassey you sense a feeling of groundedness and elegance. That's exactly how the Euphrasie starts too: subtly floral, a hint of mandarin, some meringue, lightly praline-like. That typical, lightly candied citrus note that you immediately recognize once you've had it.

On the palate then generous, immediately familiar: candied lemon, kiwi, delicate blossoms and a beautiful balance between freshness and roundness. Not playful – rather confident.

What I like about this cuvée: It shows how Chardonnay + Pinot Noir from Tauxières-Mutry can work. Simply a Premier Cru that really does its job well.

And then there's this little detail that I like:

"7 Générations – 1 Savoir-Faire."

You really taste that craftsmanship has been passed down through generations here.

Tasting Notes

Subtly floral with mandarin, meringue and praline notes on the nose. On the palate candied lemon, kiwi and delicate blossoms with beautiful balance between freshness and roundness.
