The Cuvée Euphrasie is not a vintage but a multi-vintage assemblage: 85% Chardonnay from 2012 and 15% Pinot Noir from 2011, from Louvois and Tauxières-Mutry. On New Year's Eve it wasn't about analysis, it was about the moment — and the Euphrasie isn't only excellent for classic tasting but also for sabering: a clean cut, a subtle "pop" and that special feeling that only a sabered bottle can provide.
