Sometimes you just have one of those evenings: No energy to cook, feeling tired, so you reach for delivery.

Pizza Diavolo, spicy, greasy, and really not much to look at. ️

Normally I care about aesthetics and setting. The dough, ingredients, appearance, and taste would have been better if I'd made it myself in my pizza oven, but sometimes it works out this way too.

Still, I opened a really good bottle to go with it…

A Blanc de Noirs with depth: Powerful on the palate, with dark fruit, fine spice, and cool, chalky minerality. It easily deserved a more serious dish, but handled the pizza effortlessly. Stylish, confident, completely without attitude.

A wine that shows good champagne can work even with mediocre food.
