The Solera RP-R from Robert Allait isn't a Rosé as you might think, but rather a Blanc de Blancs with 5% Pinot Noir.

The color is distinctly rosé with golden yellow reflections, the texture creamy, the aromatics deep. Roasted notes, citrus, brioche, and a hint of salted almond.

On the plate alongside: Gorgonzola & hard cheese cubes Caprese with fresh basil from the garden A summery-light combination with character, carried by a champagne that shows how elegantly maturity and freshness can go hand in hand.

In the glass: • 95% Chardonnay, 5% Pinot Noir • No malolactic fermentation • 40% aged in wood • Réserve perpétuelle since 2017 • Dosage: 5 g/l (Extra Brut)
