Philosophy and Style

Faivre makes champagne for attentive drinkers. The consistently low to absent dosage shows a house that trusts its grape material. The champagnes are mineral, focused and have a cool elegance that makes them excellent food companions. No champagne at Faivre is meant for casual sipping -- each cuvée deserves attention.

Épisode 21 – Tour d'Horizon

Fine, spicy champagne with cool minerality and precision. Dry, clear and characterful with enough backbone for aromatic dishes. The Meunier portion gives the champagne a fruity base, but this is kept in tension through the Extra Brut dosage. A food-pairing champion that works as well with Asian cuisine as with a strong cheese.

My tip: With a Thai curry with coconut milk or Pad Thai -- the spice of the champagne and the aromatics of the food complement each other perfectly.

Les Champs de Romy

A clear, cool and elegant Blanc de Blancs with serious character and long finish. Focused rather than loudly fruity, with enough grip for hearty dishes. The mineral coolness is remarkable -- this champagne has the precision of a scalpel. Not a champagne for beginners, but a pleasure for connoisseurs.

Compared to the Tour d'Horizon, the Champs de Romy is narrower and more focused. Where the Tour d'Horizon uses the breadth of assemblage, the Champs de Romy relies on the pure voice of Chardonnay.

Les Confidences de l'Année 2018

A precise vintage champagne with clear structure, fine salinity and minerality. The 50/50 blend of Chardonnay and Pinot Noir shows a beautiful balance between freshness, fruit and depth. Dosed as Brut Nature, which gives the wine an uncompromising dryness. The 2018 vintage brings warmth and ripeness that are elegantly balanced by the absent dosage.

My tip: For me, the most balanced cuvée in the range -- best shows the house's skill.

What Makes Faivre Special?
