Champagne R. Faivre — Meunier Terroir from Belval

Champagne R. Faivre is a Récoltant-Manipulant from Belval-sous-Châtillon in the Vallée de la Marne. The maison is led by David Faivre, who as a vigneron has dedicated himself to the Meunier terroir of the Haute Vallée de Belval.

His philosophy is stated on Instagram: "Révéler mon terroir … pour révéler vos émotions" — reveal terroir to unleash emotions. The approach is natural winemaking with minimal intervention, low sulfur additions, and extremely restrained dosage.

Vignoble & Soil

The vines are planted in Belval-sous-Châtillon, where Meunier is the dominant grape variety. The soil signature is clay-limestone with green clay — a structure that David Faivre explicitly highlights across several cuvées. The green clay shapes the minerality and coolness that characterizes his champagnes.

One of the parcels is called Les Champs Robins and is reserved as a single vineyard for the Blanc de Blancs cuvée "Les Champs de Romy."

Viticulture & Sustainability

David Faivre works according to the principle of "Respect du vivant" — respect for all living things. This shows through low sulfur use, minimal intervention in the vineyard, and natural winemaking. Official certifications haven't been documented yet, but the approach is clearly oriented toward gentle farming practices.

Vinification

Fermentation occurs primarily in stainless steel tanks, with individual cuvées using partial wood aging — such as "Épisode 21," where 20 percent is aged in wood and 80 percent in stainless steel. Malolactic fermentation is carried out completely. For assemblage, David Faivre draws on reserve wines, such as in "Épisode 21" from the 2019 and 2020 vintages.

The dosage consistently stays in the lower range: between 0.5 and 1.6 g/l — corresponding to Extra Brut to Brut Nature. This restraint gives terroir room to express itself and emphasizes the cool, salty minerality of the clay-limestone soils.

The Cuvées in Detail

Épisode 21 – Tour d'Horizon

Assemblage champagne from reserve wines of the 2019 and 2020 vintages, composed of 52 percent Meunier, 29 percent Pinot Noir, and 19 percent Chardonnay. Twenty percent of the wine ages in wood, eighty percent in stainless steel tanks. Malo is completed, dosage is 0.5 g/l. Disgorged on February 25, 2024, this shows as a fine, spicy champagne with cool minerality and precise structure — the green clay layer is perceptible.

Les Champs de Romy

Blanc de Blancs from the single vineyard Les Champs Robins in Belval, 2020 vintage, aged in stainless steel tanks with complete malo. Dosage 1.5 g/l. Disgorged on November 5, 2024, closed with Tirage liège (natural cork already during bottle fermentation). Clear, cool and serious, with an elegant minerality that clearly expresses the clay-limestone soil.
