Vinification

At Maison Raday, the focus is on uncompromisingly precise vinification. The Cuvée Ramosa Ripa was aged for 10 months in wooden barrels, followed by 36 months of lees aging. The style is Brut Nature with 0 g/l dosage – the terroir should come through unadulterated.

The Cuvées in Detail

Ramosa Ripa — Brut Nature 2019

Limited edition of 1,562 bottles, vinified from 50% Chardonnay and 50% Pinot Noir each. Tirage in June 2019, disgorgement in June 2022 after three years on the lees. The champagne shows a direct, intense lime impression with fine salinity and chalky minerality, plus light brioche notes. Ten months in wooden barrels have given the wine structure without dominating it.
