Domaine Doussot Bourdot is a Récoltant-Manipulant (RM) from Loches-sur-Ource in the Côte des Bar (Aube). The maison produces grower champagne with a clear Bar signature: straightforward, mineral, taut – line and texture over lush aromatics.

Vignoble & Terroir

The vines are located in Loches-sur-Ource. The tasted cuvée suggests a pronounced Chardonnay focus, though whether additional varieties are in the portfolio remains unclear.

Vinification

The maison works with barrel aging – at least for the cuvée Les Moulins. The style is clearly defined: mineral, precise, with the typical Côte des Bar structure. The dosage is in the Brut Nature range (0 g/l), which further emphasizes the taut line.

Les Moulins — Blanc de Blancs Brut Nature

A straightforward Blanc de Blancs with fresh yellow fruits, mirabelle and herbal notes. The structure is taut, mineral and very precise – classic Côte des Bar signature. Barrel aging, dégorgement in March 2024. During tasting, there was an unusually strong foaming that lasted about 30 seconds.
