Domaine Doussot Bourdot

Domaine Doussot-Bourdot is a Récoltant-Manipulant (RM) from Loches-sur-Ource in the Côte des Bar (Aube). Led by young winemaker Billy Doussot, who took over the family heritage and has been bottling under his own name since 2021, after previously selling the grapes. The style is straightforward, mineral and taut, focusing on line and texture rather than opulent aromas.

Vignoble & Soil

The estate covers around 8.5 hectares in Loches-sur-Ource and Essoyes, predominantly Pinot Noir (about 7.5 ha) and just under a hectare of Chardonnay, from which the tasted Blanc de Blancs comes. Work is done naturally and regeneratively: gentle soil cultivation, permanent cover crops, compost fertilization and no herbicides.

Vinification

Doussot-Bourdot vinifies parcel by parcel and ages the wines exclusively in oak barrels, around ten months on the lees, with indigenous yeasts, without fining and without filtration. The style is mineral and precise, with the typical Côte des Bar structure, often as Brut Nature (0 g/l), which emphasizes the taut line.

The Cuvées in Detail

Les Moulins: Blanc de Blancs Brut Nature

A straightforward Blanc de Blancs with fresh yellow fruits, mirabelle plum and herbal notes. The structure is taut, mineral and very precise, classic Côte des Bar style. Aged in oak barrels, dégorgement in March 2024. During tasting, there was unusually strong foaming that lasted about 30 seconds.
