Vinification

Alfred Gratien works with oak barrels — at least for the Cuvée Paradis, complete aging in wood is documented. Malolactic fermentation is blocked, which gives the cuvée a fresh acidity structure and increases its aging potential. The style focuses on complexity through oak and tension through preserved malic acid.

Cuvée Paradis — Brut 2016

Vintage champagne with clear oak influence: brioche, citrus zest, roasted nuts. The absence of MLF keeps the acidity taut and gives the wine an energetic foundation. Disgorged in January 2024, the champagne works surprisingly well with BBQ smoke flavors — the oak notes and freshness play with smoke and grilled crust.
