The name says it all: Champagne Boonen is based in Festigny, and Le Cirque comes from the Cirque de Festigny, a bowl-shaped site on the left bank of the Marne (Rive Gauche), whose limestone-marked slopes wrap around the village like an amphitheater. 100% Meunier, aged in stainless steel tank, 24 months on lees, dosed at 2.5 g/l as an Extra Brut.

I tasted it alongside a colorful antipasti plate: artichoke hearts with olive oil and coarse pepper, burrata, crema di balsamico, and briefly toasted organic bread. Expressive, spicy, slightly untamed, and yet surprisingly focused for a single-varietal Meunier. A glass that doesn't dominate but carries and weaves things together. Served at around 9 degrees.
