The Blanc de la Montagne from Rémi Georgeton needs a bit of temperature to unfold. At about 45°F it still shows closed – a few degrees warmer, and it opens perfectly.

On the nose, immediately lime, green apple, some white bread, plus a cool, herbal freshness that transforms with air into notes of mint, apple peel, and a slightly earthy tone. Along with this gentle aroma reminiscent of damp chalky soil.

On the palate, surprisingly soft and fleshy. No aggressive acidity, but rather balance. Cooked fruit, a touch of hazelnut, plus a salty, almost chalky texture on the finish.

The wine lingers longer than you'd expect after the first sip.
