Champagne AYALA — Pioneer of Restraint

Champagne AYALA was founded in 1860 by Edmond de AYALA in Aÿ. Edmond, descendant of a Basque-Spanish noble family, married the daughter of the Comte de Mareuil and received the Château d'Aÿ with its vineyard as dowry. Today Hadrien Mouflard leads the house as Directeur Général, which has belonged to Famille Bollinger since 2005. AYALA cultivates 22 hectares of its own vineyards in Aÿ and works with around 100 winegrower families who contribute another 120 hectares — totaling over 70 Crus from six Terroirs across Champagne.

History

Edmond de AYALA founded the Maison in 1860 in the Grand Cru of Aÿ. Just five years later, in 1865, the house positioned itself radically against the taste of the era: While the champagnes of the period were sweetened with 150 grams of Dosage per liter and more, AYALA brought its "dry champagne" to market with only 21 grams — a revolutionary step that continues to shape the Maison's identity today.

In 1882, AYALA was among the founding members of the Syndicat des Grandes Marques, today's Union des Maisons de Champagne. Edmond's younger brother Fernand conquered the British market: in 1908, the house received the Royal Warrant on the occasion of King Edward VII's coronation. Around 1920, the Maison reached its first peak — one million bottles of annual production, on par with the great names of Champagne.

The takeover by Famille Bollinger in 2005 marked a fresh start. In 2007, a modern Cuverie was built with 120 small stainless steel tanks for micro-vinification — a system unique in Champagne that allows each parcel to be vinified separately. In the same year, AYALA launched the Cuvée Brut Nature with zero grams of Dosage. Hadrien Mouflard took over management in 2012 and sharpened the positioning: Chardonnay as the lead variety, purity as principle, international expansion while remaining anchored in the French homeland.

Vignoble & Soil

The 22 hectares of estate vineyards are located in Aÿ, classified as Grand Cru. Additionally, AYALA sources grapes from about 100 winegrower families from over 70 Crus total, distributed across the Côte des Blancs, Montagne de Reims, Vallée de la Marne, Sézannais, Vitryat, and Côte des Bar. Over 50 of these Crus provide Chardonnay — the grape variety that represents at least 50 percent in all of the house's Cuvées.

The soils are characterized by chalk, the geological foundation of Champagne. Particularly in the sites of the Côte des Blancs and Montagne de Reims, the characteristic Craie with its fossil marine deposits shows itself — optimal drainage, constant water supply, mineral character.

Viticulture & Sustainability

AYALA pursues a "Démarche responsable et durable" with the stated goal of leaving a positive impact "de la vigne au verre." The house speaks of "Respect de la Nature et des Hommes," but doesn't yet name specific certifications. The collaboration with winegrower families is based on long-term relationships and shared interest in sustainable cultivation. In 2025, AYALA started a partnership with INITIAL Expertise for decarbonization.

Vinification

The heart of vinification is the Cuverie built in 2007 with 120 small stainless steel tanks. This micro-vinification — unique in Champagne — makes it possible to vinify each parcel separately and later blend with precision. Each year the house sets aside a selection of wines as "Vins de réserve," stored in small containers: a kind of library that ensures complexity and consistency over the years.

The philosophy is called "Révéler l'essentiel" — reveal the essential. This means: low Dosage, at least three years on lees, Chardonnay elegance, precision over pomp. The Brut Majeur, for example, gets by with only 6 grams of Dosage per liter, the Brut Nature with none at all. This restraint isn't a fashion trend, but DNA since 1865.

Brut Majeur

The identity-defining Cuvée of the house. Assemblage from over 70 Crus, 55 percent Chardonnay, 30 percent Pinot Noir, 15 percent Meunier. Three years on lees, only 6 grams Dosage — clear, taut, saline freshness. Fine perlage, citrus, white flowers, green apple.

Brut Nature
