Antoine Grethen is a Récoltant-Manipulant with a consistently purist approach: spontaneous fermentation, 24 months barrel aging, 24 months lees aging, no fining, no filtration and minimal sulfur use at 30 mg/l. The vineyards are farmed without chemicals.

Viticulture & Sustainability

Antoine Grethen's vineyards are worked without chemicals. The elimination of herbicides, fungicides and insecticides is part of a consistent approach that continues in the cellar: no fining, no filtration and minimal sulfur use of 30 mg/l at bottling.

Vinification

Fermentation is spontaneous, without cultured yeasts. The base wines then age 24 months in barrel, followed by another 24 months lees aging after bottle fermentation. The dosage is 1 g/l (Extra Brut). Neither fining nor filtration is used — the champagne is bottled as naturally as possible.

The Cuvées in Detail

Éole — Extra Brut

A lightly copper-colored champagne that unites Pinot Noir and Meunier in equal parts. The base comes from 2017, 2018 and 2019, totaling 48 months from barrel to bottling. On the palate it's lean and focused, with clear chalky texture, fine herbal spice and tart red fruit.
