Champagne Rémi Henry: One Family, One Story, One Future

I discovered this Maison through a video on Instagram, which led to an email exchange with Marc-Antoine, and from that came this entry.

Champagne Rémi Henry is a family Maison from Bouzy, one of the Pinot Noir cradles of Champagne. Bouzy is 100% classified as Grand Cru and sits on the southern slope of the Montagne de Reims, right in the middle of the Champagne triangle of Reims-Épernay-Châlons. The wines from this village were already famous far beyond the region during the time of French royal coronations in Reims starting in the 17th century. Today, the chalk subsoil gives Pinot Noir the tension and mineral depth for which this Cru is known.

The Maison in its current form dates back to 1985: That's when Rémi Henry took over his grandparents' family vines and founded the champagne house with Odile that today bears his name. Now their son Marc-Antoine continues writing the story, in the second generation of the brand, but in a family that has been rooted in Bouzy for centuries. His training has taken him through various regions of France and abroad, and these experiences are exactly what he reflects today in the Maison's assemblages: a familiar Bouzy Pinot Noir character to which he consciously adds a note of elsewhere.

The family describes the house with a simple formula: "One story, one life, one future to share."

Vignoble & Terroir

The vines are located exclusively in Bouzy, no purchasing of grapes from other villages, the entire vignoble is focused on the identity of the Grand Cru. Bouzy belongs to the 17 Grand Cru communes of Champagne and has always been the Pinot Noir village of the Montagne de Reims. The south-facing slopes provide late, even ripening, while the chalk subsoil stores moisture in dry years and gives the wines their characteristic minerality.

Pinot Noir grapes from Bouzy

Farming follows Haute Valeur Environnementale (HVE) and Viticulture Durable en Champagne (VDC), the two official French sustainability programs for viticulture. The Maison is also a member of Champagne de Vignerons, the association of independent grower champagne houses.

Vinification

Harvest is done traditionally by hand. The Maison vinifies the majority of cuvées in temperature-controlled stainless steel tanks, with the exception being the Blanc de Noirs from the Sensation line, which is fermented in demi-muids (500-liter oak barrels), as is the Bouzy Rouge. For the three single-vintage cuvées from the Sensation and Brut Nature lines, malolactic fermentation is deliberately blocked to preserve acidity as a tension element. The classic multi-vintage cuvées, however, undergo complete malolactic fermentation.

Lees aging is significantly longer than the legal minimum: at least 48 months for the multi-vintage Tradition and Elégance cuvées, 10 years for Réserve and Ambitieuse, 3 years for the Sensation cuvées. Disgorgement takes place for the current batch in September 2025 (or May/June 2025).

The Cuvée Range: Four Collections, 11 Cuvées

Marc-Antoine has deliberately structured the range into four collections that represent different style families. The dosage policy is consistent: each Cuvée can be delivered in Extra-Brut or Brut Nature upon request.

Collection Brut Expérience: The Classic Line

Brut Tradition · 70% Pinot Noir, 30% Chardonnay · Assemblage of multiple vintages · 48 months on lees · 10 g/l Brut · round, generous style, characterized by Pinot Noir fruit and Chardonnay freshness. The Maison recommends it for apéritifs and cocktail soirées, with trout papillote with almonds or sea bass in salt crust.

Brut Rosé · 70% Pinot Noir + 5-7% Bouzy Rouge, 30% Chardonnay · 24 months on lees · 10 g/l Brut · gourmand, fleshy rosé profile where Chardonnay freshness carries the red fruit of Pinot. Recommended with salmon gravlax, shrimp ceviche, or a Reims rose biscuit tart.

Brut Réserve · 100% Pinot Noir · Assemblage of multiple vintages, tirage April 2012 · 10 years on lees in the cellar · 12 g/l Brut · winey, spiced style with Pinot Noir character and brioche notes. The Maison recommends it with spicy or chocolate desserts, Opera Spéculoos, or a caramel puff pastry creation.

Collection Cuvée Sensation: Single Vintage, Micro-Cuvées

Cuvée Prestige 2021 · 50% Pinot Noir, 50% Chardonnay · 2021 vintage from two parcels, without malolactic fermentation · 3 years on lees · 5 g/l Extra-Brut · tense, straight style with citrus and acacia blossom freshness from Chardonnay and the fruit bite of both varieties. Recommended with seafood, Marennes oysters, Breton sea urchins.

Cuvée Blanc de Blancs 2022 · 100% Chardonnay · Parcellaire, micro-cuvée · with malolactic fermentation · 3 years on lees · 5 g/l Extra-Brut · mineral and fresh, with lemon and pineapple. A Chardonnay from a Pinot Noir terroir, the unusual tension arc is part of the appeal. The Maison recommends a scallop carpaccio with citrus fruits or a lobster bisque verrine.

Cuvée Blanc de Noirs Fût de Chêne 2022 · 100% Pinot Noir · Parcellaire, vinification in demi-muids (500-liter oak) · with malolactic fermentation · 3 years on lees · 5 g/l Extra-Brut · oak-influenced and structured, Pinot Noir fruit with slow, progressive attack, then spicy and toasty notes. Recommended with Salade Champenoise with smoked duck breast and truffled foie gras.

Collection Brut Nature: Zero Dosage

Three cuvées that mirror the profile of the Brut line, but come to market without sugar addition at disgorgement:

Brut Nature Elégance · 70% Pinot Noir, 30% Chardonnay · 48 months on lees · 0 g/l · recommended with sesame-crusted tuna tataki, sushi and maki.

Brut Nature Ambitieuse · 100% Pinot Noir · 10 years on lees · 0 g/l · recommended with aged cheeses, 24-month Comté, Chaource, Tomme de Savoie.

Cuvée Brut Nature Evasion 2021 · 50% Pinot Noir, 50% Chardonnay · 2021 vintage, without malolactic fermentation · 3 years on lees · 0 g/l · the Brut Nature version of the Prestige cuvée. Recommended with Marennes oysters and seafood.

Coteau Champenois: Bouzy Rouge

Bouzy Rouge 2020 · Still wine, 100% Pinot Noir · Lieu-Dit Le Clos Colin · late hand harvest · maceration in stainless steel tank · malolactic fermentation and aging in demi-muids for 12 months · 3 years bottle aging · a red Coteaux Champenois with dark fruit and woody aromas, spicy, with length on the palate. Recommended with white and red meat dishes, veal chop with rosemary, duck breast with honey, filet mignon with Reims mustard, and afterwards with Chaource.

Collection Nouveau Chapitre: Age d'Or

Brut Nature Age d'Or · Magnum and bottle · the rarest cuvée of the house: a collection of exceptional bottles that were forgotten in the cellars, from the 1994, 1995, 1999, 2003, 2004, 2008 and 2010 harvests · 50% Pinot Noir, 50% Chardonnay · disgorgement June 2025 · 0 g/l Brut Nature. Mature aromas, spices, candied fruit. For exceptional occasions, truffled foie gras, caviar, truffle puff pastry.
