Vinification

Palmer works with a Solera system, where decades-old Pinot Noir reserve wines are blended over years. This system is particularly used in their Rosé Solera and gives the Cuvée an unusual depth and complexity that goes far beyond typical rosé profiles.

The Cuvées in Detail

Rosé Solera

A rosé that breaks from the usual pattern: Chardonnay, Pinot Noir, and Meunier form the base, plus a portion from the house's own Solera barrel with decades-old Pinot Noir reserves. The Cuvée ages two to three years on the lees and develops aromas of wild strawberry, black currant, vanilla, and cinnamon. Full-bodied, fresh, and precise on the palate, with a gentle depth that elegantly weaves spice and fruit together.
