Vinification

Palmer & Co works with a Solera system for reserve wines, some of which are over 15 years old. These reserve wines flow into the Réserve Brut cuvée — where they make up over 30% of the assemblage. The dosage is 7–8 g/l for the cuvées I've tasted (Réserve Brut and Blanc de Blancs).

Blanc de Blancs

100% Chardonnay from Premier and Grand Cru sites on the Côte des Blancs and Côte de Sézanne. Citrus, white flowers, delicate brioche and almond notes. Mineral, fresh and creamy at the same time — pairs well with sushi and seafood.

Réserve Brut

Over 30% reserve wines from the Solera system, some over 15 years old, provide maturity and harmony. Brioche, yellow apple, citrus, slightly nutty notes. Fresh spice and good structure.

52.5% Pinot Noir · 32.5% Chardonnay · 17.5% Meunier · 7.5 g/l · 48 months
