Champagne Bauchet

Champagne Bauchet is a Récoltant-Manipulant from Bisseuil in the Montagne de Reims, run by the 4th and 5th generation. The house farms parcels in Bisseuil in the Montagne de Reims and Grauves in the Côte des Blancs. The style is defined by the clarity of Chardonnay (finesse and freshness) and the structure of Pinot Noir (power), by long lees ageing and a deliberately late disgorgement. Maturity and texture are at the heart of the approach.

Vignoble & Terroir

The house farms more than 33 hectares. The vines span two départements, the Aube and the Marne, across three emblematic Champagne terroirs: the Côte des Blancs, the Montagne de Reims and the Côte des Bar. Bisseuil and Grauves are classified as Premier Cru. The focus is on Chardonnay, complemented by Pinot Noir from Bisseuil. Grauves brings the mineral clarity and freshness, Bisseuil contributes structure and red fruit.

Vinification

Bauchet works with stainless steel. Ageing in inox favours precision and fruit, as documented with Contraste. The malolactic fermentation is blocked to preserve freshness and tension. Dosage ranges between 5.5 g/l (Contraste) and 8 g/l (Signature Brut), all in the Extra Brut to Brut range. Characteristic is the long lees ageing, at least 36 months for the entry cuvée, up to 60 months for the millésimes. Disgorgement is deliberately late to develop depth and creamy texture. Wood plays no dominant role. For Origine, an ageing with 6% wood (foudre) is documented.

The Cuvées in Detail

Signature Brut Premier Cru

The house style in a bottle. 80% Chardonnay, 20% Pinot Noir, 25% reserve wines from earlier years, 36 months on the lees. Chardonnay clarity with creamy depth: pear, green apple, citrus, mirabelle, stone fruit, a fine brioche note. Elegant and precise, without insistent sweetness.

80% Chardonnay, 20% Pinot Noir · 8 g/l · 36 months · Premier Cru Grauves (Côte des Blancs) & Bisseuil (Montagne de Reims)

Contraste

100% Pinot Noir, aged in stainless steel, 24 months on the lees. Red apples, mirabelle, brioche, roasted aromas, nutty spice. Creamy, lively, precise with a cool tension. The name says it all: a counterpoint to the Chardonnay signature.

100% Pinot Noir · 5.5 g/l · 24 months

Saint-Nicaise

Blanc de Blancs, millésime 2015. A warm vintage that makes the Chardonnay broader and more textured. 60 months on the lees. Peach, pear, citrus, brioche, vanilla. Round and mellow with a golden warmth. Surprisingly, the fullness recalls Pinot Noir, though there is not a drop of it. A cuvée that shows how much breadth Chardonnay can develop in warm years.

100% Chardonnay · 7 g/l · 60 months · Premier Cru Grauves & Bisseuil

Mémoire

Millésime 2018, another warm vintage. 75% Chardonnay, 25% Pinot Noir, at least 5 years on the lees. A fuller, rounder, harmonious champagne with brioche, pastry, nut, honey. The texture comes from the time on the lees. A champagne that rewards patience.
