Champagne Cose — Roland Champion from Chouilly Grand Cru

Champagne Cose — Roland Champion from Chouilly Grand Cru

Champagne Cose is a négociant project by Victor Allier and Gil Conejo. Instead of large volumes, the two focus on hand-selected grapes from top growers and individual parcel champagnes. The grapes for the Champion CHY R.22 come from Roland Champion in Chouilly Grand Cru on the Côte des Blancs.

Vignoble & Terroir

The grapes for the champagne documented so far come from Chouilly, one of the most renowned Grand Cru villages of the Côte des Blancs. Chouilly is known for its Chardonnay with fine minerality and freshness, shaped by chalky soils.

Vinification

Champagne Cose works with natural fermentation in oak barrels — for the Champion CHY R.22, they used barrels that were previously used at Selosse. The aging takes place on full lees, without sulfur addition. The philosophy focuses on uncompromising quality and respectful work with the material that the growers provide.
