Champagne J.B Héry: Grand Cru assemblages from historic Crayères

Champagne J.B Héry is a young Négociant-Maison from Châlons-en-Champagne, founded in 2019 by Jean-Benoît Héry. His sourcing reads like a list of the finest addresses on the Côte des Blancs: grapes from the Grand-Cru villages of Avize, Chouilly, Cramant and Le Mesnil-sur-Oger, complemented by his own vignoble in Fleury la Rivière in the Vallée de la Marne.

The headquarters is located on Rue Basse de Compertrix in the historic center of Châlons-en-Champagne, where Jean-Benoît took over the former Sipeyre winery along with its Crayères, those chalk cellars that still give the house its character today.

History

The winemaking history of the building begins in 1900, when wine merchant Ferdinand Sipeyre had the property built with Crayères on the slope of Rue Compertrix. Between 1906 and 1908, he constructed a large concrete winery that is still preserved today. During World War I, Sipeyre supplied wine to the French army.

More than a century later, in 2019, Jean-Benoît Héry took over the building and the Crayères. His goal: to revive the historic chalk cellars and create artisanal champagne assemblages from Grand Cru sites, with a focus on authenticity and origin.

Vignoble & Soil

The estate's own vignoble is located in Fleury la Rivière, right in the heart of the Vallée de la Marne. This is complemented by grapes from four Grand-Cru villages on the Côte des Blancs: Avize, Chouilly, Cramant and Le Mesnil-sur-Oger. Work is done with Chardonnay and Pinot Noir, though exact hectare and percentage figures are not yet available.

What unites these sites is the chalk in the subsoil. It's what gives the Blanc de Blancs their mineral freshness and their almost cutting precision.

Vinification

Vinification takes place in those very same Crayères, the chalk cellars that were already carved into the hillside during Sipeyre's time. The philosophy behind it: artisanal work in a natural, historically rich environment, to create assemblages with depth and clear terroir character. Dosage remains low, and the Millésime 2002 even comes completely without sugar as a Brut Nature with 0 g/l.

Signature: Blanc de Blancs

The entry-level cuvée of the Maison, vinified from 100% Chardonnay from the Côte des Blancs. Fine chalk minerality, citrus notes and a delicate brioche character define the style. Fresh, linear and with an elegant creaminess.

Millésime 2002: Brut Nature

Vintage champagne from the famous 2002 vintage, an assemblage of 90% Chardonnay and 10% Pinot Noir. Candied citrus fruits, ripe apple, nutty tones and brioche notes form the aromatic backbone. The typical chalk minerality of the Grand Cru sites carries the structure. Dosage: zero.
