Maison Lefébure is run by Sébastien and Marie-Laurène and works in two regions: the Côte du Petit Morin and the Côte des Bar. The house's identity is captured in their Instagram bio: "DISCIPLES DU SOL" — disciples of the soil who place terroir and soil characteristics at the center of their work.

Vignoble & Soil

Lefébure cultivates parcels in two geologically distinct areas. At the Côte du Petit Morin, Craie du Campanien (Campanian chalk), Argile à Meulières (iron-rich clay with millstone grit), and Sable (sand) dominate. In the Côte des Bar, the focus is on Portlandien — a hard, fossil-rich limestone layer from the upper Jurassic.

This soil signature runs through the cuvées: different geological layers, different expressions.

Vinification

Lefébure uses aging in oak barrels, unfiltered, and hand-riddled at least for the Stella Maris cuvée. The philosophy combines traditional winemaking with creative freedom; their Instagram profile features a quote from Leon Battista Alberti — a hint that art and craft are consciously considered together here.

The Cuvées in Detail

Stella Maris Blanc de Blancs

A 100% Chardonnay from the Côte du Petit Morin with mineral precision and creamy structure. Aging takes place in oak barrels, the cuvée is unfiltered and was hand-riddled. After air contact, a buttery creaminess develops with a hint of popcorn. The label shows a mermaid — inspired by Botticelli's Birth of Venus. Recommended serving temperature: 50–54°F.
