Maison Lefébure: Disciples du Sol

Maison Lefébure is run by Sébastien and Marie-Laurène and operates in two regions: the Côte du Petit Morin and the Côte des Bar. The house's philosophy is summed up in their Instagram bio: "DISCIPLES DU SOL," disciples of the soil who place terroir and soil characteristics at the center of everything.

Vignoble & Soil

Lefébure farms parcels in two geologically distinct areas. At the Côte du Petit Morin, Craie du Campanien (Campanian chalk), Argile à Meulières (iron-rich clay with pebbles), and Sable (sand) dominate. In the Côte des Bar, the focus is on Portlandien, a hard, fossil-rich limestone layer from the upper Jurassic period.

This soil signature runs through their cuvées: different geological layers, different expressions.

Vinification

Lefébure uses aging in oak barrels, unfiltration, and hand riddling for at least their Stella Maris cuvée. The philosophy combines traditional winemaking with creative freedom. Their Instagram profile features a quote from Leon Battista Alberti, a hint that art and craft are consciously brought together here.

The Cuvées in Detail

Stella Maris Blanc de Blancs

A 100 percent Chardonnay from the Côte du Petit Morin with mineral precision and creamy structure. Aged in oak barrels, this cuvée is unfiltered and hand-riddled. After air contact, it develops a buttery creaminess with a hint of popcorn. The label shows a mermaid, inspired by Botticelli's Birth of Venus. Recommended serving temperature: 50-54°F.
