Champagne Binon-Coquard — Meunier and Pinot Noir from Spoy

Champagne Binon-Coquard is a Récoltant-Manipulant from Spoy in the Côte des Bar (Aube department). Led by Maxime Binon and Cyrielle. The maison farms vines in Spoy, Meurville and Champignol-lez-Mondeville and is Terra Vitis and HVE certified.

Vignoble & Soil

Binon-Coquard owns parcels in three villages of the Côte des Bar: Spoy, Meurville and Champignol-lez-Mondeville. The region is located in the southern part of Champagne, characterized by Kimmeridgian soils — a terroir that particularly favors Pinot Noir and Meunier.

Viticulture & Sustainability

The maison works according to Terra Vitis guidelines and holds HVE certification (Haute Valeur Environnementale). Their self-description reads "Viticulteurs de souche, Elaborateurs de cœur" — growers by tradition, winemakers with passion.

Vinification

Binon-Coquard relies on stainless steel aging and works with a solera system for reserve wines, which is used for example in the cuvée Extra Pinot Noir: 50 percent base wine, 50 percent reserve wines from the solera. Dosage ranges between 0 and 8 g/l. The style: extended lees aging, focus on Meunier and Pinot Noir, clean fruit.

Millésime 2016

Pure Meunier from Spoy and Meurville. Strawberry jam, quince jelly and cocoa on the nose, full-bodied on the palate with candied orange and the typical juiciness of Meunier. After more than seven years on the lees, the wine shows impressive structure. The 2016 harvest was difficult — only 2,000 bottles were produced.

Extra Pinot Noir

Pure Pinot Noir without dosage. 50 percent 2021 harvest, 50 percent reserve wines from the solera system. Light stone fruit, peach and white flowers with restrained red fruit. Dry and clean on the palate, the mid-palate round, almost creamy. Aged in stainless steel, tirage on May 3, 2022.
