Champagne Nowack is a Récoltant-Manipulant from Vandières in the Vallée de la Marne. The maison is run by Géraldine and Benoît Nowack. Their approach: spontaneous fermentation, oak aging, Brut Nature – craftsmanship that's clear and without frills.

Vinification

Nowack works with spontaneous fermentation and ages at least part of their cuvées in oak. The philosophy is clearly evident in the S.A. Sans Année, which comes to market as Brut Nature (0 g/l dosage). Reserve wines from multiple vintages (2012–2021) flow into the assemblage – a non-vintage concept that, despite having a base vintage, deliberately focuses on consistency and depth.

The Cuvées in Detail

S.A. Sans Année

60% Meunier, 40% Chardonnay – spontaneously fermented, oak-aged, reserve wines from 2012. Base 2022, disgorged 12/2024. At warmer temperature, spicy clove notes open up; cooler, the champagne shows citrus peel, herbs and wet chalk with clear acidity structure. A Brut Nature that relies on terroir and time, not on dosage cosmetics.

Ratafia

A Ratafia is offered during cellar tastings – a classic mistelle made from must and alcohol that belongs to Champagne tradition.
