Edouard Duval is a Récoltant-Manipulant from Bligny in the Côte des Bar (Aube department). The house manages a 28-hectare monopole estate, the Domaine Sainte Eulalie – a contiguous vineyard area on marl-limestone with iodine-rich limestone on the upper slopes.

Vignoble & Terroir

Domaine Sainte Eulalie encompasses 28 hectares exclusively in Bligny. The grape variety breakdown is roughly 78 percent Pinot Noir and 22 percent Chardonnay. The Pinot Noir is planted on the upper slopes, while the Chardonnay grows in plots including "L'Épicéa." The soils are characterized by marl-limestone, with iodine-rich limestone added in the higher elevations – a signature that clearly shows through in the wines.

Viticulture & Sustainability

Edouard Duval avoids herbicides and works with respect for the living ecosystem in the vineyard. The philosophy is "Respect of Living" – an approach that puts soil and natural biodiversity at the center.

Vinification

The base wines age partly in stainless steel, with around 30 percent in Burgundian Demi-Muids – large wooden barrels that contribute texture and complexity without pushing the wood character to the forefront. The dosage ranges from 5 to 8 grams per liter, with the Extra-Brut version below that. The focus is on terroir expression with restrained sweetness and clear minerality.

Brut d'Eulalie

The heart of the house. Pinot Noir from the upper slopes, Chardonnay from the "L'Épicéa" plot. Around 30 percent of the base wines age in Demi-Muids. On the nose, iodine-rich limestone with lemon, cherry, peach, raspberry and meringue. On the palate, creamy and melting with pomelo fruit and a salty, mineral finish. Powerfully elegant.

Noir d'Eulalie Extra Brut

Pure Pinot Noir with structured character and fine, slightly oxidative wood notes. Partial aging in wood. Balance between depth and freshness, ideal as a food pairing wine.
