Champagne Piot Sevillano is an independent vigneron maison from Vincelles in the Vallée de la Marne. It's led by Christine Sévillano (vigneronne) and Jérôme Piot. The maison is HVE and organic certified (AB) and follows a natural, independent approach: "Champagnes de caractère, naturels et atypiques."

Viticulture & Sustainability

Piot Sevillano has worked according to organic principles for years and is HVE certified. In the vineyard, they use zero insecticides and zero herbicides. A special feature: soil work is done partially with horses, named Fred and Manon. The maison's philosophy revolves around authenticité, partage et convivialité: authenticity, sharing, and conviviality.

Vinification

Piot Sevillano focuses on stylistic diversity. Some cuvées contain wood components: The Cuvée Rebelle (100% Chardonnay) is aged 10% in wood, the Cuvée Interdite 15%. In the Cuvée Prestige, the proportion of reserve wines is around two-thirds. Many wines are unfiltered or minimally filtered, which allows for natural cloudiness. The dosage range spans from 0 g/l (Brut Nature) to 35 g/l (Demi-Sec Noct'en Bulles). The maison pursues an uncompromising, natural approach without mainstream adaptation.

Brut Nature

Uncompromisingly dry, taut, clear. Apple vinegar and balsamic notes characterize the approach, not for fans of crowd-pleasing wines, but a clear statement of terroir.

Extra Brut Fraîcheur de Coteau

Fresh, lightly spicy, with beautiful copper color. Rounder than the Brut Nature, almost with sweetness on the finish, despite only 4 g/l dosage.

85% Meunier · 15% Chardonnay · 4 g/l

Cuvée Rebelle

100% Chardonnay, 10% aged in wood. Exotic, fruity, with a noticeable dosage jump. Unfiltered, so cloudiness can occur.

Cuvée Interdite

Significantly rounder, "praline": soft, seeming sweet, but complex. 15% of the Chardonnay component matures in wood.

50% Chardonnay · 40% Meunier · 10% Pinot Noir · 7.2 g/l · 15% Chardonnay in wood

Millésime 2013

Fruity-fresh, with fine sweetness. Surprisingly accessible for a vintage, less tension, more balance.

Brut Essence de Terroir

Copper color, fine minerality, beautiful fruit. Noticeably present mousse, almost demanding.

Cuvée Prestige

Deeper, warmer, juicy. Toasted aromas only show after about ten seconds, lots of reserve wine, lots of patience. Two-thirds of the assemblage consists of reserve wines.

Cuvée Provocante

100% Meunier from old vines. Spicy, balanced, classic Brut style, the most approachable wine in the flight.

Cuvée Impertinente

Taut acidity, mouth-watering, almost Chardonnay-like. Gooseberry, citrus peel, lots of freshness, despite being 100% Pinot Noir.

Rosé Âme de la Rive Droite

Very approachable, beautiful acidity, red fruit more cool than sweet. Unsweetened strawberry jam rather than candy. 15% red wine in the assemblage.

60% Meunier · 25% Pinot Noir · 15% Chardonnay · 7 g/l · 15% red wine

Noct'en Bulles (Demi-Sec)

Despite 35 g/l, hardly as sweet as expected: apple, brioche, apricot, mango. More balance than dessert.

First contact: December 16, 2025, advent calendar tasting with 11 bottles in 3 flights. An impressive range: from uncompromising Brut Nature through single-variety mono-cépages to a Demi-Sec that remains surprisingly balanced despite 35 g/l. Piot Sevillano shows that dosage can be a tool, not just a concession to mass taste.
