Viticulture & Sustainability

Thomas Perseval farms his vines in Chamery according to organic guidelines and is AB certified. The vineyards are located in the Premier Cru sites of the village, which sits on the northern flank of the Montagne de Reims.

Vinification

Winemaking takes place in stainless steel with a focus on structure through long lees aging. The philosophy is purist: structure from ripeness, not from dosage. Art'Terre 2020 was disgorged after 17 months of lees aging as Brut Nature (0 g/l dosage), à la volée, by hand.

The Cuvées in Detail

Art'Terre: Brut Nature 2020

Energetic, spicy, food-friendly. The cuvée shows slightly oxidative notes, warm, spicy, a bit wild. Tirage in September 2021, disgorged in February 2023 à la volée. The 17 months of lees aging provide structure, while dosage remains at zero.
