Vinification
Aging takes place in stainless steel with a focus on structure through extended lees aging. The philosophy is purist: structure from maturity, not from dosage. Art'Terre 2020 was disgorged after 17 months of lees aging as a Brut Nature (0 g/l dosage) — à la volée, by hand.

Energetic, spicy, food-friendly. The cuvée shows slightly oxidative notes — warm, spicy, a bit wild. Tirage in September 2021, disgorged in February 2023 à la volée. The 17 months of lees aging provide structure, while dosage remains at zero.
