Herbert & Co.

Herbert & Co. is a Récoltant-Manipulant from Rilly-la-Montagne in the Montagne de Reims. The maison is run by Thomas Herbert and Charlotte Herbert. Rilly-la-Montagne is classified as Premier Cru; additionally, the maison sources grapes from Grand Cru sites in the region.

Vignoble & Terroir

Herbert & Co. farms vines in three villages of the Montagne de Reims: Rilly-la-Montagne, Verzenay, and Mailly. Rilly-la-Montagne holds Premier Cru status, while Verzenay and Mailly are among the Grand Cru villages of Champagne. The focus is on Pinot Noir — the cuvée "1000% Pinot Noir" suggests a clear specialization, though whether they grow exclusively this variety remains to be seen.

Vinification

The base wines age 9 months in small Burgundian oak barrels (228-liter barriques). After bottling, the cuvées rest about 3 years on the lees. The dosage is 2.5 g/l (Extra Brut) — a purist approach that gives space to the Pinot Noir and terroir. The winemaking is extremely hands-on and aims for powerful expression rather than smoothing things out.

The Cuvées in Detail

1000% Pinot Noir — Blanc de Noirs Extra Brut

The signature cuvée of the maison: 100% Pinot Noir from Premier and Grand Cru sites of the Montagne de Reims. After 9 months of barrique aging comes about 3 years on the lees. The champagne shows enormous vinosity, with dark berries, earthy notes, and warm oak expression. Powerful and creamy in texture, with purist freshness. Instead of a muselet, the bottle features an agrafe closure — a handcrafted detail that underscores the house philosophy.
