Lallier — Réflexion instead of routine from Aÿ
Lallier is a maison in Aÿ in the Montagne de Reims, founded in 1906. Today Dominique Demarville is responsible for vinification as Chef de Caves. The maison works with Grand Cru sites and considers itself a family estate.
Lallier doesn't produce a classic non-vintage cuvée, but instead releases a new Réflexion edition annually — a reinterpretation of the assemblage with changing base vintage and reserve proportion. Currently on the market: R.021, R.020, R.019, R.018 and R.016. Alongside these, Grand Cru parcel wines like Ouvrage, Les Sous Loridon (100% Pinot Noir) and Loridon (100% Chardonnay).
Vinification
Lallier vinifies partially in wood. Malolactic fermentation is blocked — at least for the Réflexion line. The dosage for the R.019 is 7 g/l. The maison speaks of "haute-couture vinification": terroir should express its own character, not shaped by conventions but formed by the nature of the sites and the ideas of the cellar masters.

Réflexion R.019
Base vintage 2019, 40% reserve wines. Assemblage: 56% Pinot Noir, 44% Chardonnay. Partially aged in wood, no malolactic fermentation, 7 g/l dosage. Fresh yellow fruits, brioche and subtle spice notes, juicy and powerful with saline minerality. Structured, forceful — not a routine NV, but an annual reinterpretation.
